Gran Chaco is a sprawling lowland region in southeastern Bolivia, stretching across the departments of Tarija, Chuquisaca, and Santa Cruz. Renting a 4WD vehicle is strongly recommended for exploring the surrounding Chaco wilderness, as paved roads quickly give way to rough dirt tracks.

Best time: Visit between May and September during the dry season, when roads are accessible, temperatures are milder, and wildlife congregates near water sources.

Local food: Try sonso de yuca (yuca paste with cheese), locro chaqueño (hearty meat and corn stew), freshly caught dorado fish from the Pilcomayo River, and chicha, a traditional fermented corn drink.
